Since 1989, extensive efforts have been made to re-establish the vineyards, resulting in a masterfully designed, multi-levelled, sunken hilltop winery. This architectural marvel, opened by Baron Eric de Rothschild, owner of Château Lafite in Bordeaux, embodies the principles of gentle handling, visual control, and natural gravity flow. The estate's vineyards, situated on ancient agricultural soils, benefit from a mild growing climate influenced by the nearby Atlantic Ocean. Altitude ranges from 140m to 310m above sea level, with vineyard slopes facing north to northwest and south to southeast.

Vergelegen's vineyard holdings encompass classic international grape varieties, including Sauvignon Blanc, Sémillon, Chardonnay, Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, Petit Verdot, and Shiraz. With a total of 149 hectares dedicated to vineyard plantings, the remaining land is meticulously preserved for environmental conservation. Vergelegen's commitment to conservation is exemplified by its status as the largest private environmental project in South Africa, situated in one of the world's richest floral regions.
